Grilled Romaine & Tomato Salad with Gorgonzola Vinaigrette

Grill your greens , I beg you!
The most simple of lettuces that are in your grocery carts can be transformed when on the grill .
Grill some cherry or grape tomatoes alongside and let’s see what happens. I added a little flat iron steak and roasted potatoes and there you have it a hearty meal.

Grilled Romaine Salad w Grilled Tomatoes
and Gorgonzola Vinaigrette:

Serves 4

2 heads Romaine, washed and sliced in half (keep root in place)

1 Tbls olive oil or spray olive oil

1 cup  cherry or grape tomatoes

For the dressing:

1 1/2 Tbls gorgonzola

1 Tbls  red wine vinegar

1 tsp honey

2 Tbls olive oil

salt/pepper to taste

Method:

Heat your grill. spray or brush each half of romaine and place on grill cut side down. Check after 2 minutes and flip to other side for 1 more minute. Depending on your grill temperature, you want the leaves to char not burn so don’t walk away.

Meanwhile place tomatoes in a basket to warm and blister on grill.

Mix dressing ingredients and smash some of the gorgonzola in the dressing to give it a creamy texture but leave some chunks as well.

Place each half on a plate and divide tomatoes and scatter on each portion, drizzle with vinaigrette and serve.

  • Add strips of skirt or flat iron steak, roasted potatoes, grilled salmon or chicken to make into a heartier meal.
