Thanksgiving is one week away. Did you forget about that puff pastry in the fridge or freezer? Well, time to have a plan. Here is an easy appetizer or dessert. A little savory, a little sweet. It just works.


Apple Cheddar Tarts
Serves 6-8
1 sheet puff pastry
1/4 cup honey mustard sauce
1 large granny smith apple ( thin slices)
1- 1/4 cup white cheddar( shredded from the block)
Method
Preheat oven to 375 degrees. Thaw pastry (if it’s from the freezer). Place on a baking sheet. Doc center of pastry, leave 1/2 inch border for folding. Brush honey mustard sauce on center of pastry, reserve a little for the edges. This is a light coating to give a little flavor. ( 1 tablespoon each honey and dijon mustard, whisk together.) Cut apple with a mandolin, or as thin as you can with a knife. Even slices are what you want. Add shredded cheddar to the center area. Place apples in rows on top of cheddar/pastry. Any design you like, or just in rows will do the trick. Fold over edges, then brush edges with remaining sauce and place in the oven. Bake for 18-22 minutes until edges a lightly browned and crisp. Let cool slightly, cut into squares and serve.
If you make ahead, cut into squares, place on a serving dish that is oven proof. Reheat in 350 degree oven for 10 -12 minutes before serving.
