Sambal Salmon Tacos
It’s nice to have a spring seafood recipe that’s easy to pull together. The only ingredient you may not have on hand is Sambal Oelek. This spicy ground chili sauce is used in a variety of cuisines. Pick up a jar, it’s inexpensive, and you will find all kinds of ways to use this flavor. Sambal, and few other ingredients make the perfect balanced glaze.
Add a quick slaw with whatever lettuces and veggies you have on hand. Char some corn tortillas, and it’s taco night, just a little elevated.
Ingredients:
Serves 2-4 (2-3 tacos per person)
2 3-4 oz salmon filets
1 cup mix of lettuces, carrots, red peppers, cabbage, cucumber chopped
12 corn tortillas
Glaze
1 tablespoon sambal oelek
1 tablespoon honey
zest and juice of a medium orange
Salt pepper to taste
Vinaigrette
2 teaspoons rice wine vinegar
1 teaspoon honey
1/2 inch ginger grated
Combine
Method:
Preheat oven to 350. Mix glaze ingredients, brush filets and reserve the rest of the glaze.
Bake for 10-14 minutes until salmon is medium or to your desired temp 125-135 degrees. Rest. Char corn tortillas on a gas stove or in the oven to soften while salmon rests. Shred salmon, and add more glaze.
Toss lettuce veggie mixture with rice wine vinegar/ honey ginger vinaigrette .
Build tacos dividing salmon, add slaw on tortillas and add any extra glaze on top.
