Simple Creamy Tomato Soup

Soup’s on!
What is the classic American lunch?  Grilled Cheese and Tomato Soup of course. I have the soup covered for you.   Here is a favorite around my house with my kids. My daughter even draws pictures of soup because she loves it so much. Easy ingredients, and I’m sure it will make it on your families lunch and dinner rotations. Try it and let me know who loves it at your house.

Simple Creamy Tomato Soup

Makes 8 serving

2-3 tablespoons olive oil

2-4 garlic cloves, minced

1  yellow onion diced

2 (28 oz) cans  organic crushed tomatoes

1 cup chicken stock (or vegetable stock)

2 tablespoons coconut sugar (optional)

1/4 cup half and half

8 large fresh basil leaves, roughly chopped

1/4 teaspoon dried oregano

1/4 teaspoon smoked paprika

salt and freshly ground black pepper, to taste


Dice onion, and mince garlic set aside. Heat 1-2 tablespoons olive oil in a stock pot. Add onions, after 5-6 minutes add garlic until it’s fragrant. Add spices to bloom them, add tomatoes and stock. Bring to a boil, then simmer for 15-20 min. Blend with an immersion blender if you like a smoother soup. Add half and half, check for seasonings and if needed add the coconut sugar. Chop basil and top each bowl with some leaves.
This recipe can easily be halved, but freezes well.
