One of my favorite recipes for flat iron, skirt, or flank steaks is so simple. Just season it with salt & pepper, rub in freshly ground cumin and crushed coriander seeds. Add the zest and juice of one lime, and let it marinate in the lime juice for at least an hour. Grill it for 5-6 min per side. It’s so flavorful, but the spices do not cover up the flavor of good beef.

I just started grinding my own cumin this week and I am converted. Wow! The scent and flavor is so much better than cumin that has been ground and sitting on a store shelf. I highly recommend trying this for yourself with one of your favorite spices. It’s not summer, but since I started this I’m grinding my own spices these days. I had to make this for our Sunday night dinner.
It’s very easy. I use a coffee grinder for just spices. Buy the whole spice and let the machine whirl away. This recipe is what I call a non recipe as the amounts can change depending on how many steaks you are grilling and the type of cut you choose.
Flat Iron Steak with Coriander and Cumin
1 2 lb Flat Iron Steak ( flank, and skirt steak works well too)
1 -1/2 tsp fresh ground cumin
1 -1/2 tsp crushed coriander seed
Zest and juice from 1 lime
Salt/pepper to taste
Method:
Salt and pepper the steak. Rub cumin, coriander and lime zest on steak. Add lime juice to a plastic bag and place the steak in the bag. Let marinate for 1 to 4 hours. Grill on medium high heat for 5-6 min per side. Internal temperature should be 145F Let rest for 7-10 min. Ok I’m big on this…. Let rest for 7-10 min. Serve with favorite sides. We love roasted red potatoes, grilled asparagus and peppers. Try this and let me know what you think.
