Cacio e Pepe Warm Brussels Sprouts

Cacio e pepe is one of my all time favorite pasta dishes. It was a natural thought to bring this flavor to a vegetable dish. Shaved Brussels sprouts get transformed when they are saute, given a pecorino shower and a pistachio crunch. Make this easy dish and let me know what you think.

Cacio e Pepe Warm Brussels Sprouts

Serves 4

16-18 shaved Brussels sprouts 

1 tbls olive oil

1 tbls Fresh ground pepper 

1/4-1/2 cup grated pecorino cheese

1/4 cup crushed pistachios 

Salt if needed

Method:

 Shave Brussels on a mandolin safely or chop by hand. Heat a sauté pan with olive oil. Add Brussels, sauté until slightly wilted.  Turn heat off, add pepper and pecorino, toss with tongs. Plate individual servings and top with pistachios.
