Broccoli Cheddar Soup

It’s been a while since I have posted recipes, but trust me, I have been busy making amazing food for my family and clients. I have several posts waiting in the wings. I chose this recipe to start out the year because it’s easy, delicious and a winter comfort food. A new favorite for my ten year old. Make this soup this week. The recipe is for 2 but can easily be doubled. Enjoy!

Broccoli Cheddar Soup

Serves 2

2 tablespoons butter

1/4 cup chopped onion 

2 tablespoons flour

1 cup stock

1 cup half and half 

1 1/2 cup chopped broccoli 

1/2 cup carrots matchstick 

1/8 teaspoon nutmeg 

1/4 cup white cheddar cheese, grated

Salt and pepper to taste

Method:

Melt butter, add onions, saute, add flour. 

Cook for 1-2 minutes, add stock while slowly whisking, then add half and half. Add carrots and broccoli. Simmer on low for 15-20 minutes until vegetables are softened. Season with salt and pepper, stir in cheese, add nutmeg and check seasoning again. 

Serve and enjoy!
