Savory leek tart.
What a simple treat, and a simple recipe.
The most difficult part is making sure your leeks are clean. Chop and rinse to get rid of any grit. Quality pre-made pastry is a game changer, but if you love to make dough, you got this. 
Sauté a little, roll out the dough, spread your ricotta, add the leeks, herbs and Parmigiano. Bake it , enjoy yourself or take it to anyone. They will love it.

This tart is ready for the oven.

Savory Leek Tart

1 large or two small leeks, chopped and rinsed well

19 inch round of pastry, store-bought or homemade

6 oz ricotta cheese

1 tsp thyme

1/4 cup parmigiano

1 egg, beaten

1 tbsp olive oil or butter

salt/pepper

Heat a sauté pan, add olive oil or butter, sauté leeks until soft. Roll out tart, spread ricotta leaving a half-inch border around the edge. Add leeks, spread in an even layer, top with parmigiana and thyme. Salt and pepper to taste. Fold over edges. You can keep for 24 hours at this stage . When ready to bake, preheat oven to 350 degrees, brush edges with egg wash, sprinkle the edges with a little salt, and bake for 15 to 18 minutes. Serve warm with a nice salad.
