This is one of my most requested recipe’s. I have emailed, texted and printed this out for clients and friends. It’s an original of mine and favorite of many. It’s delicious warm when you make it but it’s just as fantastic cold.
Make it for your next BBQ.
1 8.8 oz bag quick cooking barley
1 cup fire roasted corn
½ red onion chopped
1 red pepper chopped
1 sm or ½ lg cucumber seeded and chopped
1 bunch cilantro
¼ – 1/2 cup rice wine vinegar
1 shallot chopped finely
1 Tbls tahini
1 Tbls sesame oil (toasted)
1 Tbls honey or to taste
salt & pepper to taste
Mix dressing and set aside. Cook barley as directed on package. Place all veggies in a bowl, use 1/3 of dressing on veggies. Once barley is cooked, season with a little salt and pepper, add barley and rest of dressing mix well and add cilantro leaves whole or torn.
Serve warm, keeps well and is delicious cold.
