I’m still working through my peach recipes. After my trip to the Peach Truck I have an abundance of peaches. Grilled peaches with goat cheese is an easy and elegant choice.
Nothing beats grilled stone fruit. This is so simple, so delicious and well received as a first course or dessert. Make this and impress your friends.
Grilled Peaches with Goat Cheese
Serves 8
4 Peaches, halved, pit removed.
4 oz goat cheese
1 Tbls spoon Honey
Pistachios
1Tbls Sugar
Heat grill to medium heat. Sprinkle peach halves lightly with sugar. Grill pit side down for 5 minutes. Take off heat and let cool slightly. Divide got cheese and place 1 tsp into each peach. Place on plate, drizzle with honey and sprinkle with pistachios. Repeat with each serving.
