Buffalo Sauce, YES! If you have a love of spicy foods then you know all about buffalo wings, sauces, chicken sandwiches .. the list goes on. There are several salads and sandwiches out there with buffalo chickpeas, but here is one not to be missed. Get your favorite sauce ready!
Buffalo Chickpea Salad
Serves 4
1-2 can organic chickpeas drained & rinsed
1 tbls organic olive oil
1/4-1/2 cups( if using two portions of chickpeas) Buffalo Sauce (Frank’s is my go to) Simple Truth is organic
4 cups organic greens with kale
2 stalks organic celery
2 organic scallions sliced thin
1/2 organic cucumber seeded and sliced
Cucumber Dill Dressing
8 oz plain organic greek yogurt
Fresh organic dill chopped
1 tbls red wine vinegar
2 tbls organic cucumber finely chopped
1/2 tsp celery salt
salt/pepper to taste
Blend all ingredients until smooth. If it’s too thick add a little water.
Method:
Clean Greens, divide into four bowls. In a saute pan heat olive oil and add chickpeas. Once they are warmed, add buffalo sauce and toss until coated. Turn off heat and let rest. Place chopped vegetables on salads and drizzle each salad with some of the dressing. Add warm chickpeas to each salad and remaining dressing to each salad. Pick up your fork and enjoy.
