Tomatilla Guacamole

I recently had some amazing tomatillo guacamole on a weekend trip to a Grown up Girls Camp in North Carolina. Just like summer camp when you were a kid, but just for a long weekend.  And just like camp, you see old friends and make new ones.  Abby if you are reading this please send me your recipe! Your guac was so perfect!   I tried to reverse engineer it,  and I think this is a winner.  Try it out, let me know what you think.  It’s bright, delicious and so easy to make.

Tomatilla Guacamole

Serves 6-8

1-3 small or 2 medium tomatillos
2 small avocados
1/4 red onion chopped
1 lg or 1-1/2 small jalapeños seeded & chopped
1 tsp cumin
Juice of 1 lime
1/2 cup cilantro
1 /2 tsp honey
1 tsp salt

Method:

Combine all ingredients in a food processor to get a smooth consistency.
Serve with chips or use on tacos.
Keeps for 5 days
