Once again I am giving you two options to enjoy a roasted vegetable. Roasting broccoli is super delicious and healthy. Try one of these two options with your food fans and let me know which one you like best.

Roasted Broccoli
Basic Recipe serves 4
3 Broccoli crowns chopped into small bit size pieces
1 tablespoon olive oil or olive oil spray
2 garlic cloves rough chopped
salt/ pepper to taste
Method
Preheat oven to 375 degrees F. Place broccoli pieces on a parchment lined sheet. Add chopped garlic and oil. Toss items. Place in oven and roast for 20 -25 min. until they are charred.

Tahini Dressing & Dukkah
1 tablespoon tahini
1/4 tsp honey
1/4 tsp lemongrass grated or pre -grated from a tube
1 tablespoon rice wine vinegar
Salt to taste
Whisk all items together and set aside. If very thick you can add a tsp of water to thin it for use.
1 tbls Dukkah seasoning ( this a mix of nuts ,seeds, and spices)
Everything Seasoning
1 tsp each
black and white , sesame seeds, granulated garlic, onion, sea salt
OR use Trader Joe’s Everything but the bagel seasoning

Finishing Touches:
Choose which method you would like to finish your roasted broccoli.
Tahini Dressing & Dukkah: drizzle broccoli with dressing and sprinkle Dukkah, serve.
Everything Seasoning: Topping roasted broccoli with seasoning mix and serve.
Roasted Broccoli is a new fav in my house since Kristin made a batch for us this summer. Also killer on the grill!

It’s is killer! Try it with the Tahini Dressing and Dukkah. If you want to make your own Dukkah, mix fennel seed, coriander seed, anise seeds, almonds and crush into a fine crumb. Keeps well in a sealed container
