Kale and Mushroom Scramble

This is nothing new or earth shattering. A quick sauté of veggies on hand, add eggs and you have a quick healthy dish. I found myself running around wrapping up the week on a Friday and realized I hadn’t really eaten that day… not a fasting thing, which is planned but a oh my gosh I’m getting a headache! I had been really active that day and not listening to my body and I wanted to eat consciously. UHMMM I have kale, a few mushrooms… eggs, Ta -Dah! Midday meal solved. Reproduce this on the fly with what you have around and let me know your quick fix meals.

Kale Mushroom Scramble

3-4 leaves of Kale stripped from stem and torn into pieces

4 mushrooms sliced

1-2 teaspoons olive oil

2 eggs mixed well

salt/ pepper to taste

  • optional white cheddar

Method:

Heat a non stick pan with olive oil on medium heat.. Add kale and mushrooms and sauté until kale is crispy and mushrooms are softened. Add eggs to veggies and stir until all items are incorporated, season as you go. Finish with cheese if desired. Enjoy!
