Waffles 2.0

We all may have more time on our hands. Working from home. Possibly kids at home. A friend who is in health care and working long hours. A neighbor or elderly parents to check in with and everyone’s hungry. These times need new navigation. Here is your moment to dive into big batch cooking and make these waffles. Double the recipe if you like. They reheat in the toaster perfectly. Of course I have used lots of healthy ingredients. Buckwheat flour, flax seed meal, almond meal, just to name a few. A recipe filled with fiber and antioxidants. They are full of flavor. Make these waffles this weekend and enjoy all week long. Keep Healthy everyone!

Waffles 2.0

Makes 12-16 individual waffle segments

1 cup All Purpose flour (substitute gluten free if needed)

1/2 cup almond meal

1/2 cup flaxseed meal

1/4 cup buckwheat flour

2 tbs sugar 

2 tsp baking powder

1/4 tsp salt

1 tsp vanilla

2 cups milk

1 egg

1 tsp cinnamon 

1/4 stick (2 tbs) melted unsalted butter

Method

Combine dry ingredients, then add milk, eggs and melted butter while the iron is heating. 

Measure 1/3 cup batter to cover your iron. 

Follow directions on your waffle maker 

Top with your favorites – maple syrup, berries or crispy pancetta. Makes about 12-16 waffles, depending on size of your machine.
