Stone Fruit Salsa

I know I have not posted for a while this summer. I have been making great food for my clients and family. Many draft posts are in my arsenal, and I’m ready to share another easy salsa recipe. This mimics my basic formula with the mix up of stone fruit. It will be an accompaniment to slow cooked bbq ribs for a weekly client. I would serve this with chicken, fish and would be great as a snack to take with chips. Enjoy and hope everyone is well.

Stone Fruit Salsa

Serves 4-6

1 Large peach, chopped in small cubes

1 red plum, chopped in small cubes

1 black plum, chopped in small cubes

1 jalapeno, diced

1/4 red onion, diced

1 lime zest and juice

handful of cilantro, torn

salt/pepper to taste

Method

Chop fruit, dice veggies, place in a bowl. Add zest and juice of a lime, toss to incorporate. Season and add cilantro. Keep in a container for use or use right away. This is better as it sits. Make ahead is ideal. Use on tacos, fish, pork, chicken and of course for the snackers, chips!
