Grilled Chicken Sliders with Grilled Romaine ,Tomato and Green Goddess Yogurt Sauce

It’s been a long time since I posted a recipe and I’m going old school with this one. Too many times we’ve all had a grilled chicken sandwich. Boring right? They all feel the same.

I’m mixing it up by making this a slider. Adding grilled romaine lettuce, homemade Italian vinaigrette marinade, and a green goddess yogurt sauce with a kick of chipotle.

Make the marinade, don’t use the bottle dressings, this tastes so much better.

I’ll make it easy, I’m using a Trader Joe’s seasoning and your favorite Italian seasoning you have in your spice rack. Let’s get grilling!

Grilled Chicken Sliders

Marinade

1 1/2 lbs chicken breast cut into thin 3 inch pieces

2 tablespoons olive oil

2 tablespoons red wine vinegar

2 teaspoons Italian seasoning

1/2 tsp red pepper flakes

salt/pepper to taste

Slider components

6 Slider buns

tomato slices

1 head romaine, grilled and chopped

1 cup* green goddess yogurt sauce

  • any other condiments you would like to provide

Method

Cut chicken into desired size pieces to fit your slider buns. Mix marinade, add chicken and marinate for 2 hours minimum. Heat grill to medium heat. Grill romaine lettuce, cut in half, leaving root intact. 3-4 minutes until charred. Let cool slighty, then chop. Toast slider buns for 2-3 minutes, set aside. Grill chicken for 4 minute per side, let rest for 5-7 minutes. Now it’s time to build your sliders.

Place some sauce on either side of bun, add romaine, tomato and chicken. Feel free to make a slider bar and provide additional topping and sauces so everyone can make their own.

* Green Goddess Yogurt Sauce

1 cup plain greek yogurt

1 tablespoon Trader Joe’s green goddess seasoning

1 tsp chipotle chili powder

Mix well until incorporated. Keeps for a week in refrigeration.
