Greens and Farro Salad with Cherries, Walnuts and Goat Cheese

Another salad. I just can’t stop making new combinations of greens and grains with a seasonal twist. You can use any grain you like. I am choosing farro for this since it’s a nutty grain and works well with the walnuts and the fresh tart cherries. I like to make a white balsamic vinaigrette, but a lemon dressing would be delicious as well. A great side dish this summer, add a protein to make it a main dish. Perfect for any night, or to take to a BBQ.

Green, Farro Salad with Cherries, Walnuts, and Goat Cheese

Serves 6-8

1 20 oz container Greens

1 cup cooked farro

1/4 lb fresh cherries, cut in halves

1/4 cup walnuts, crushed

4 o goat cheese

White Balsamic Vinaigrette

1/4 cup white balsamic vinegar

1/2 cup olive oil

1 tsp honey

salt/pepper to taste

Whisk together and toss through greens and farro, top with cherries, walnut and goat cheese.
