I am always looking for great ways to use the abundance of summer zucchini. So many recipes to try even within the Zucchini Fries category. I have taken the most simplest approach with my recipe. If you eliminate the Panko breadcrumbs it becomes gluten free. Watch out these are addictive and each batch will disappear in a flash.
Zucchini Frites
1-3 medium zucchini, seeded and cut into thin strips
1 egg beaten
1/2 cup Panko breadcrumbs
1/2 cup fine grated Parmesan
1/8 tsp oregano
1/8 tsp parsley
1/8 tsp garlic powder
Salt/ pepper to taste
Method
Preheat oven to 425 degrees. Line a sheet pan with parchment paper. Mix all dry ingredients and set aside. Place zucchini strips working in small batches, 2-3 strips in egg, then roll in cheese breadcrumb mixture. Place on baking sheet with space in between. Once all strips are coated, place in preheated oven and bake for 20 min. or until golden brown. Serve immediately on their own or with warmed marinara sauce.
*Eliminate panko and it becomes gluten free
I’ve recently used rice cracker (sea salt only) crumbs to replace the panko crumbs. This substitute worked great! Very crispy and great flavor.
