This is the fastest and most impressive pasta dish to whip up on a busy weeknight or for guests. Only a few ingredients to manage and chances are you have everything in house to make this delicious dish.
Pasta with Tomatoes & Feta
Serves 2-4
1 container cherry or grape tomatoes cut in half
1/2 cup of feta cheese, crumbled
1/2 tsp oregano
2 tbls olive oil
2 cloves minced garlic
1/2 lb pasta (spaghetti works best)
Method
Get a pot of pasta water started and salt it well, bring to a boil. Heat olive oil in a shallow pan, add garlic and watch that it does not burn. Once it’s fragrant it’s time to add the tomatoes. Let them cook until they are soft enough to smash with the back of your spoon. This is a great time to let kids help. They love smashing the tomatoes. Keep this mixture on low until pasta is ready. Once pasta water is ready, drain your pasta. Add oregano and feta cheese to the tomatoes and get all ingredients incorporated. Now’s the fun part, add your pasta directly to the tomatoes in the pan and toss until all strands are coated. A little fresh basil would be a great addition. You are ready to serve!
