Recovery Meals Farro Salad

I trained for a half marathon this spring and I’ve had to look in my arsenal for recipes to refuel after long runs. This isn’t my first time around the block with long distance races, but it’s been several years since I’ve finished a ten mile run. Thanks to my running buddies group text this spring,  I got through training and the race with a lot of laughs. Thanks again to Roger, Lindsey, Sarah!

I texted this meal to them one night and now it’s time to share with you. I like to have a balance of protein, fats and carbohydrates to give your body back what it needs. I made this salad with Farro, spinach, grapefruit, feta, and avocado. Add a piece of roasted salmon as well and you have everything you need and it becomes a dinner salad.

Farro Recovery Salad

Farro Recovery Salad

Serves 2

1 cup cooked farro *

1/2 avocado cut into chunks

1/2 grapefruit supreme*

1 cup spinach leaves chopped

1/4 feta cheese

Optional- 2 4oz salmon fillets

For the dressing

juice from grapefruit and 2 tbls lemon juice

1/4 tsp honey

salt/ pepper to taste

1/4 cup olive oil

Method for Farro Recovery Salad

Make the vinaigrette, whisk all ingredients together and place at the bottom of a bowl you will use to toss the salad. Add warm farro, spinach, fruit, and avocado.  salt and pepper to taste. Toss and divide on two plates. Sprinkle with feta.

If using salmon, preheat oven to 375. Lightly brush each fillet with olive oil, salt pepper. Roast for 12 minuets or until it’s your preferred medium to medium well.

Flake salmon and drizzle with any leftover dressing and place on top of salad.

Tips for Farro Salad

*Farro, I like Trader Joe’s 10 min. Farro. Follow directions on package it’s perfect.

*Supreme – this is a way to cut citrus fruit in clean segments away from the membrane. Using a paring knife, slice off the peel all around the fruit. make sure to get all the white pith off. Once that is complete, take your knife and slice in between each section and work your way around the fruit until it’s complete. Squeeze any juice from the remaining membrane and set aside for any use. Here some will be for the dressing.
