Greek Salad

This is my go to salad when I have to bring something to feed a crowd. I make this as a serving of one for me and have made it for 100. I usually have all ingredients in house and maybe you do as well. Get your big salad bowl ready!

Greek Salad

Serves 4

2 Heads romaine

1/2 cup feta cheese

1/4 cup kalamata olives

1/4 cucumber seeded and sliced

1/2 cup cherry tomatoes halved

1/4 red onion thinly sliced

Greek Dressing

1/4 cup red wine vinegar

1/4 tsp dried oregano

1/8 tsp honey

1/2 cup olive oil

slat/ pepper to taste

1/2 lemon juiced

1 Tbls feta cheese

Method for Greek Salad & Dressing

Chop romaine, add all other items except the feta in a bowl. Whisk all ingredients for the dressing and lightly mash feta cheese to give the dressing a creamy consistency. Pour dressing lightly over salad. This makes more than needed , toss, add remaining feta cheese and enjoy.

Tips:

I love to add quinoa to this salad. It adds protein and it makes for a hearty meal.

This an easy recipe to double or triple.
