A toast to toasts for the New Year! These easy to dream up nutritional bombs can be eaten at breakfast, lunch, dinner or a mid day snack. Don’t just think of them for breakfast. Here are a few ideas. Some you probably already make, some maybe new to you. Some inspiring to you. Get creative this year and give three cheers for toasts.

Basic Recipes:

Avocado Tomato Toast

1 avocado 1/2

1 english muffin toasted

2 slices of a Roma tomato

Sea Salt to taste

After toasting your english muffin, add sea salt to avocado half and work into a spread. Add to muffin halves, top with tomato slices and enjoy.

Almond Butter, Super Seeds, Raspberries

Almond butter, super seed raspberry toast.

English muffin toasted

2 tablespoons almond butter

1 tablespoon super seed mix (I like Trader Joe’s)

6 Raspberries divided on each English muffin half

Roasted Beets, Cherries, Goat Cheese

1 roasted beet, chopped into pieces and marinated in apple cider vinaigrette

2 slices of sunflower seed bread toasted

4 cherries, pitted and halved

1 oz goat cheese

Spread goat cheese on toasted bread, add sliced beets and cherries, top with fresh thyme leaves. Goat cheese and beets are a grown up PB&J! They just compliment each other. Enjoy!

Use crostini slices for an appetizer.
